Hi all, hope you had a wonderful Mother's Day and now that that's behind us let's look forward to the next big occasion which for us will be Promotion Day for Carly and Father's Day for hubby. But in between those two/three celebrations there are still meals to prepare and tonight's was a nice pork roast, steamed veggies and cabbage muffins. I was skeptical when I first read the recipe on Food.com but hey, it's a good way to get a tiny bit of veggies into the kids, the cabbage keeps the muffins moist, and they don't really taste cabbage-y, just good. It's a loose batter so don't add more flour thinking you're doing a good thing and they don't rise very high but they are worth making if only to keep your family guessing as to what they're eating, heehee.
