A few years ago my granddaughters asked me to put together a cookbook of about 20 family favorite recipes and when I did the 20 pages looked rather skimpy so I added more, and more, and more till their binders held 60. Heavily embellished I gave them to the girls at Christmastime. Every Christmas since then I've added 60 more pages to their collections and have reached the 300 mark...and they're looking forward to getting even more. These are not random recipes, they're all tried and true. Anyway, when word got around it seems everybody and their second cousin wanted a cookbook so I began selling them to cover the cost of materials and now I'm passing them on to others as digital freebies, who like me, enjoy family, friends, cooking, and sharing. Print the pages to a standard letter size and save them in any old binder that blends with your kitchen. Please do print them for yourself and gift-giving to family and friends but please do not claim as your own as it wouldn't be fair to the designers I buy from or the wonderful talent that is freely given by bloggers. I'd love to hear from you and if you leave a comment on a post I will reply on the same. Please don't leave anything on the 4shared page, I seldom think to check those.

Cake Batter Pancakes w Glaze

Morning all!   Hope you're enjoying the summer months, it hasn't been too bad here in Maine, I enjoy my early breakfast on the deck but then I tend to stay indoors the rest of the day with my best friend, the AC.

I've been online a lot lately looking for something new and different and found it while browsing the food/drink section at http://pinterest.com/.  I traced the recipe back to http://www.howsweeteats.com/2011/01/cake-batter-pancakes/ and made them (the first time) exactly as she posted.  Using Duncan Hines Classic Yellow Cake Mix I needed 1 3/4 cups of milk to reach the not-too-soft-not-too-firm pancake batter as suggested but we all found the glaze way too sweet and too thick so I lightened that up a bit, er, a lot.  Please check her out and all the goodies she has to offer.  Super sweet though they were, they were a hit with the kids - and my hubby too!  And the bonus?         E A S Y to make!

Mix dry ingredients
flour, cake mix, sugar,baking powder and salt

add the wet ones
milk, eggs, extract

combine the wet with the dry
add the sprinkles

and into the skillet it goes

made my glaze while waiting

then served Carly a short stack

 and hubby a plateful.
Carly will be having another sleepover soon so I'll be making these again with the adjustments in place using Carly's suggestion - chocolate cake mix, chocolate jimmies with a light chocolate glaze.  Meanwhile, here's the page I made up for the grandkids' cookbooks, please feel free if you've a mind to.

    Thank you for this wonderful idea of cake batter cupcakes. I suspect my grandson will love these. I'll be making them gluten free so I'll let you know how they turn out. The Cake Doctor Bakes Gluten Free has lots of tips so I'll use her ideas to make it.
    The tomato cake crumbled alot. Next time I'll be adding some xantham gum which helps decrease the likelihood of crumbles. It tasted great.
